It’s funny to reflect on how much has changed since I started my first food blog almost eight years ago. I’ve jumped from Massachusetts to Rhode Island, back to Massachusetts, down to New York, and finally I made the leap up to Maine. I went to culinary school, worked at some pretty cool places, worked at some not so cool places, and then left the food service industry all together. I dated an idiot, got dumped by the idiot, dated him again, dumped him, had him claim all of my success was because of him (HA!), casually dated some more idiots, then met Chef and got married.
Throughout all of this upheaval I’ve made some amazing friends, but I’ve also been lucky enough to keep some wonderful old friends. The support of my family and close friends has never wavered, and with the creation of With Love From Maine, it’s only grown even though most of them are 400+ miles away.
Recently I’ve been seeing a lot of my older posts from my first blog popping up on timehop since January is typically a busy month for the blog, and it’s been bittersweet. These memories that seem as if they just happened a year or two ago, not six or seven. Suddenly Super Bowl is one week away and (surprise) the Patriots are in it again. I thought it’d be a fun homage to the good ol’ days to bring back a post from 2012’s Super Bowl when the Giants beat the Patriots for a second time and I got to eat some amazing dip.
This dip comes together in minutes and is incredibly addicting. It’s salty, tangy, crunchy, and so satisfying. The best part about it? It’s actually pretty healthy compared to most dips, so you can eat the entire thing by yourself if you want!
Make it for your Super Bowl party if you’re having one! Make it to eat while you wallow in how poorly the Giants did this year if you refuse to go to a Super bowl party. Either way, just make it. It’s worth it.
Here’s what you’ll need:
2 Cups Hummus
1 Medium Red Bell Peppers
1/2 Cup Pitted Kalamata Olives
1 Medium Cucumber, Peeled
1/2 Cup Feta Cheese
Coarsely chop up the red bell pepper, kalamata olives and cucumber.
Spread a layer of hummus on the bottom of a serving dish.
Top with a layer of your chopped veggies.
Spread another layer of hummus on top of the veggies. Add a final layer of chopped veggies and top with feta cheese. Serve with pita chips or multigrain chips of your choice and enjoy!
